Chocolate Chip Cookie Skillet (GF/Paleo Friendly)

 
 
 
 

Looking for an easy crowd-pleaser to serve at your next dinner party, girls night, or just a fun, late night snack? This gluten-free, paleo-friendly cookie skillet is perfectly delicious. I shared a 10-inch cookie skillet with family and, wow, they could not get enough and also could not believe it was GF. Hope you and yours enjoy!

RECIPE

INGREDIENTS

  • 3 cups Shipetaukin Chickpea Flour (Click for 30% off with code 30BAKEOFIT)

  • 3/4 cup Coconut Sugar

  • 3/4 teaspoon Baking Soda

  • 3/4 teaspoon Salt

  • 3 Eggs

  • 3/4 cup Coconut Oil melted

  • 3 teaspoon Vanilla Extract

  • 3/4 cup Chocolate Chips (I prefer Hu Gems)

  • Vanilla Ice Cream

  • (Toppings Optional)

DIRECTIONS

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Mix all ingredients (except the chocolate chips) until fully blended.

  3. Fold in the chocolate chips.

  4. Scoop the dough into the skillet(s) and spread the mixture evenly.

  5. Bake for 22-26 minutes or until golden brown around the edges.

  6. Top with vanilla ice cream and your favorite toppings of choice.

  7. Serve immediately and enjoy!
