Hooray, it’s spring! One of my favorite ways to welcome new seasons is to bake something that will fill my home with a familiar seasonal aroma. It’s completely uplifting and brings a smile to my face.

Blueberry pie always reminds me of the spring and early summer months. Whether it’s a weekend at home or on the countryside, it feels like the perfect sweet treat.

Tip: serve warm with a scoop of vanilla icecream

Servings: 8-10

Ingredients:

Pie Crust & Filling

  • Pie Crust (store bought frozen pie shell, graham cracker pie shell, or homemade - it's your choice!)
  • 4 cups blueberries (fresh or frozen)
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 3 tablespoons corn starch
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon

Crumb Topping

  • 1 stick salted butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • pinch of salt

Instructions:

  1. Place a rack in the middle of the oven, and preheat the oven to 375 degrees F.
  2. In a mixing bowl, mix together the blueberries, sugar, flour,corn starch, honey, lemon juice and cinnamon.
  3. Pour the ingredients into your premade or store-bought pie crust.
  4. In another mixing bowl, mix the melted butter, brown sugar and granulated sugar. Once lightly mixed together, use your hands to mix the ingredients further and form crumbly pieces.
  5. Layer crumbs on top of pie.
  6. Bake the pie for about 1 hour or until you notice the crumbs beginning to become golden brown and the blueberry filing bubbling.
  7. Let fully cool, or serve warm with vanilla icecream on top!
