Hooray, it’s spring! One of my favorite ways to welcome new seasons is to bake something that will fill my home with a familiar seasonal aroma. It’s completely uplifting and brings a smile to my face.
Blueberry pie always reminds me of the spring and early summer months. Whether it’s a weekend at home or on the countryside, it feels like the perfect sweet treat.
Tip: serve warm with a scoop of vanilla icecream

Ingredients:
Pie Crust & Filling
- Pie Crust (store bought frozen pie shell, graham cracker pie shell, or homemade - it's your choice!)
- 4 cups blueberries (fresh or frozen)
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 3 tablespoons corn starch
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
Crumb Topping
- 1 stick salted butter, melted
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- pinch of salt
Instructions:
- Place a rack in the middle of the oven, and preheat the oven to 375 degrees F.
- In a mixing bowl, mix together the blueberries, sugar, flour,corn starch, honey, lemon juice and cinnamon.
- Pour the ingredients into your premade or store-bought pie crust.
- In another mixing bowl, mix the melted butter, brown sugar and granulated sugar. Once lightly mixed together, use your hands to mix the ingredients further and form crumbly pieces.
- Layer crumbs on top of pie.
- Bake the pie for about 1 hour or until you notice the crumbs beginning to become golden brown and the blueberry filing bubbling.
- Let fully cool, or serve warm with vanilla icecream on top!
